Cheesy Vegemite Sausage Rolls

  • 450g pork sausages, casings removed
  • 1 carrot, peeled and coarsely grated
  • 1/2 brown onion, coarsely grated
  • 1/3 cup panko breadcrumbs
  • 2 eggs
  • 3/4 cup mozzarella
  • 2 tbs Vegemite
  • 2 sheets puff pastry
  • Poppy seeds
  • Tomato sauce (to serve with)


  1. Place the sausages, carrot, onion, breadcrumbs and one of the eggs in a large bow. Use your hands to mix until combined.
  2. Add the Vegemite and cheese to the sausage mixture and mix until well combined.
  3. Preheat the oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Lightly whisk the remaining egg in a bowl.
  4. Cut the pastry sheets in half. Place a quarter of the mince mixture along the centre of each piece of pastry. Brush the long edge of the pastry with the whisked egg. Fold the pastry over the filling, pressing to seal. Cut each roll into 5 pieces.
  5. Place the rolls, seam side down onto the prepared trays. Brush the pastry with egg and sprinkle with the poppy seeds. Use a small sharp knife to lightly score the tops a few times to allow the steam to escape.
  6. Bake for 20-25 minutes, or until cooked through and golden. Serve with tomato sauce.
