Macadamia Spice Couscous

Preparation time: 5 mintues

Cooking time: 20 minutes

Serves: 4 as a side


  • 1 cup couscous
  • 50g butter, chopped
  • Cinnamon stick
  • 3 tablespoons yellow bush dukkah
  • 2 tablespoons chopped fresh mint ​


  1. Put the couscous into a bowl, add the butter and yellow bush dukkah.
  2. Cover with 1 cup boiling water and allow to stand for 15 minutes or until all the liquid has been absorbed.
  3. Add the mint and use a fork to rake the couscous to separate the grains.
