Vegetable Tofu Curry Preparation time: 15 minutesCooking time: 30 minutesServes: 4Serve with: rice Ingredients: 1 tablespoon macadamia oil1 onion, finely chopped2 tablespoons orange bush curry300g firm tofu, cubed250g orange sweet potato, peeled and cubed1 carrot, peeled and sliced1 zucchini, sliced1 red capsicum, cubed400g can peeled chopped tomatoes1 tablespoon sugar¼ cup Greek style yoghurt2 tablespoons chopped fresh coriander Method: Heat the macadamia oil in a pan, add the onion and cook over a medium heat for 5 minutes or until soft and golden.Add the orange bush curry and tofu and cook until the tofu is browned.Add the vegetables, tomatoes and sugar, bring to boil, cover and cook for 20 minutes or until the vegetables are soft.Stir in the yoghurt, coriander and serve. back to orange recipes
